This fall we had loads of wild rose hips. Rose hips are the seed pod of the rose plant that forms after the petals have fallen. They are tiny bright red pods that have hints of rose and wild flavors.
We've cooked them down and added sugar for a very soft set jelly. We skipped the commercial pectin so this jam is syrupy. It's perfect over cheeses or added to bubbles or a cocktail.
