We were thrilled this year when our friend's pomelo tree had ripe fruit!
The pomelo is a giant citrus (pretty much as big as your head) and one of the four original citrus varieties that all other citrus come from. These gigantic fruits are heavenly scented with a thick peel and little juice. A single fruit will perfume an entire room.
We've salt preserved these pomelo with chilis for a special jar of pomelo kosho. This jar is a twist on the traditional Japanese seasoning. It is salty with hints of grapefruit and a floral finish on your tongue. This jar has large pomelo sections to chop and add into any dish.
This condiment is traditionally used in hot pot soups but we'd add it to our winter stews, mix it into our salad dressing and we might just lick the salty, spicy jar! You can also add slices to steamed vegetables and cured meats.
This salty, slightly sour condiment has some of heat in the jar as well! This might be one of our new favorite condiments.
