A centuries old tradition, Hoshigaki means the drying of whole persimmons.
We take whole Hachiya persimmons, peel them and hang them to dry in our sunny windows. The persimmons are hung for a few months and slowly turn into dried fruit that tastes like sweet candy.
After a couple months of drying time, we have fully dried fruit.
You can slice the persimmons, add them to a salad or your favorite charcuterie board. We've also taken bits to add to our favorite pumpkin bread.
