We've taken tart and tangy limes and infused them with sweet hay smoke. The light grassy notes in the hay, soften and sweeten the limes. The limes are then packed in Hawaiian sea salt to preserve them and all their smoked juices.
We use these limes in a tagine of cooked meat or a smokey cocktail. We've also added them to steamed vegetables. They are perfect in ramen or as a salad dressing base!
