This summer, one of our favorite farmers gave us boxes of unripe, baby green peaches to jar!
We gently poached this sour peaches in a heavy sugar syrup over a long gentle simmer.
The best part of this jar is the peach syrup! The green peaches turned the syrup into a complex peach flavor that can't be beat. The peaches are edible but have little meat on them. They are perfect stuffed inside a pork roast or used in a cocktail as garnish.
And the syrup - we could drink it straight from the jar. Perfect in cocktails, over ice cream or drizzled on a favorite cheese.
