We picked up giant pomelo fruit from one of our amazing citrus farmers this spring. The pomelo fruits are gigantic and are similar to a grapefruit. They are filled with sweet juice and thick skin.
We've candied the fruit and added some urfa biber spice to give the jam some heat. The candied peels are thick and a little chewy and full of citrus flavor. Urfa Biber is a mild Turkish pepper from the Urfa region of Turkey. It has earthy tones that taste a little like chocolate and raisins with a little bit of a spicy kick.
We love the layers in this jam and the perfect melding of all the flavors. We brushed it on some grilled shrimp and would recommend it in pork meatballs or any cocktail party items.
