TThis spring one of our favorite growers had trees full of Meyer lemons.
These lemons are small and a sweeter, milder version of the traditional lemon. They have a thin rind that's perfect for preserving. We've added some Italian fennel pollen for a hint of fennel with these bite size pieces in the jars.
These lemons can be added to a tagine of cooked meat. We served them with steamed asparagus wrapped in prosciutto and a slices of the lemons.
A little taste of these bright, flavorful Meyer lemons will go a long way in each dish.
